Brinjal/Egg plant varuval
Ingredients
Brinjal/Egg plant – 2 cups
Dry chillies – 2
Small onion chopped – 20
Mustard – 1 tsp
Turmeric powder – 1 tsp
Chilly powder – 1 tsp
Urid dal – 2 tsp
Channa dal – 1 tsp
Curry leaves
Salt
Method
1. Heat the oil in a pan. Add mustard. When it splutters, add dal. When the dal turns golden brown, add curry leaves,chilly and onion cook on high flame for 2 minutes
2. Add the vegetable,salt,chilly powder and turmeric powders. Cook covered
3. Deep fry till brown,mix well & serve hot
