Mixed Drumstick and Brinjal Curry

Mixed Drumstick and  Brinjal Curry:

Ingredients

Drumstick, Brinjal and Potato – 1 cup
Curry leaves – 2 string
Mustard seeds – 1 tsp
Cumin seeds – 1 tsp
Fenugreek seeds – 1 tsp
Red dry chilly – 1
Tamarind juice – 1 cup
Coriander powder – 4 tsp
Red chilly powder – 3 tsp
Turmeric powder – 1 tsp
Sambar powder – 1 tsp
Onion – 1
Garlic pods – 6
Chopped tomato – 1
Salt – as per taste
Oil – 5 tsp

Kathirikai murungaikay kulambu
Method

1. Heat oil in frying pan, add mustard seeds, cumin seeds, fenugreek seeds, red dry chilly and saute till splutter.
2. Add the onions, garlic, curry leaves and mix well.
3. Add the tomatoes and saute till cooked. Now add the vegetables.
4. Add Coriander powder, chilly powder, turmeric powder,sambar powder and salt. Saute well till the raw smell goes.
5. Now add the tamarind juice and water.Cook the vegetables for 15 mins.
6. Remove lid and stir occasionally. After vegetables are cooked add little gingely oil.
7. Heat till the curry thickens and the oil floats on top.
8. Taste best with White rice combined with boiled egg.
